Ringraziamo la nostra affezionata lettrice Emanuela Caruso
che ha descritto per noi con grande passione i sapori, i gusti e le antiche tradizioni
dei dolci tipici molisani di Pasqua… un viaggio nelle emozioni della cucina genuina come una volta!
Ci sono cose che fanno parte di noi per sempre. Non ci lasciano mai, dovunque noi siamo. Noi molisani lo sappiamo bene. Ogni periodo dell’anno si riconduce ad una usanza particolare, ad una manifestazione popolare, ad un canto, ad un dolce.
La nostra cucina è molto legata alle stagioni e alla religione. Se chiudiamo gli occhi per un minuto e diciamo Pasqua, qual è il primo pensiero che ci viene in mente? i bambini direbbero l’uovo di 
cioccolato, ovviamente, ma noi grandi? Beh noi diremmo la pigna, i fiadoni, la pupa e il cavallo, ecc.
Questi erano i dolci tipici che preparavano le nostre nonne un tempo, ma che vengono sempre più sostituiti da prodotti commerciali già pronti.
Forse si sta perdendo sempre di più l’usanza di fare tutto in casa, sia per mancanza di tempo, da parte delle donne che lavorano, sia per la forte attrazione a cui non possiamo resistere verso quei prodotti già pronti e ben pubblicizzati, che sono là a portata di “carrello”.
Il benessere ci sta portando a questo: è molto più facile comprare un prodotto già pronto che ci garantisce il risultato, piuttosto che fare noi qualcosa che ci porta via tempo, energie, denaro e non ci assicura la riuscita dell’impresa.
Eppure se ci pensiamo bene il solo fatto di usare prodotti freschi della nostra terra dovrebbe di per sé convincerci a cimentarci nell’impresa.
Per non parlare poi delle soddisfazioni personali…vuoi mettere? E allora rivalutiamo le nostre capacità personali, sfidiamo noi stessi e pensiamo ai nostri antenati che riuscivano a realizzare dolci semplici e buoni senza i mezzi che abbiamo noi adesso.
